[Not needed] for EC, see here and here. The second link shows how to filter all the names for the shadowguard bosses.
Bosses generally have unique corpse names, so you just need to plug the name into the filter.
If you're using CC, perhaps you should ask for the full object filter to be ported to CC, or, ask for a CC graphics pack option to be ported to EC (and then start using EC).

They are currently working on a CC upgrade. We can hope that some of this is included.
A Goblin, a Gargoyle, and a Drow walk into a bar . . . Never be afraid to challenge the status quo
wouldnt be easy just to flag bosses with a "no corpse spell" flag though. i mena the matriarch has a corpse name "dragon" and i assume its easier to add a flag to bosses being cast on rather than thinking about the corpse of every new boss.
Not to mention its usually like 50 corpses on the pile plus 60 names around boss corpses... makes it difficult
You can use "matriarch" to filter on the event boss, or even "matr". That can be set before you engage the boss, so when you hold CTRL-SHIFT, you can drag the boss health bar from label and/or double click on the boss corpse label.
There are lots of cases where corpses aren't easy to click on. The shadowlord boss, wisps, and other corpses are hard to click on even without other corpses present. Your example of a necromancer using "animate dead" on a corpse isn't a good special case to handle.
